Philly Cheese "Mane" - Recipe

Lion’s Mane mushroom is a powerful medicinal and gourmet mushroom; that is delicious and has many beneficial properties. You can find Lion’s Mane for sale from local mushroom farmer in your area, and in local farmers markets.

at Lake Eola Farmers Market Sundays 10am-3pm; at Circle Square Commons Farmers Market in On Top of the World Thursdays 9am-2pm. 

 The mushrooms have a sweet flavor that may be described as a little similar to seafood. Lion’s Mane are rich in vitamins such as thiamine, riboflavin, and niacin; also a good source of essential minerals such as manganese, zinc, and potassium. Fresh mushrooms should never be consumed raw; it is best to cook or extract; steaming, sautéing, water extract, or dual extract, etc.

Ingredients: 

1/2 lb Lions mane 

Onion

Tri-color peppers 

Roll

Cheese

Oil/ Butter 

Umami Seasoning

Salt

Pepper

Chili

Cumin

Teriyaki sauce

Optional: balsamic vinegar

 

 

 

Step one: Prepare your veggies and fungi. 

 

Cut onion and peppers into slices. 

Mince garlic. 

Peel apart your fresh Lion’s Mane mushroom into bite size chunks. 

 

 

Step two: cook your onions and peppers. 

 

Add oil into pan.

Add onions, 1/2 garlic, and peppers.

Add umami seasoning, salt, and pepper.

Sauté until clear and starting to brown.

 

 

Step two: cook your Lion’s Mane

 

Add oil into a pan. 

Add your Lion’s Mane and remaining garlic. 

Add in teriyaki sauce. 

Add in salt, pepper, and balsamic to taste. 

Cover and cook down until dark brown and soft, adding water if needed. 

 

 

Step three: assemble sandwich and bake. 

 

Preheat oven to 350. 

Add Lion’s Mane, onions, and peppers to roll. 

Top with cheese. 

Bake in over for 5-10 minutes; until cheese is melted and toasted to liking.
